My oven has been broken for about two weeks now. That constitutes torture for someone, such as myself, who loves to bake. I am constantly baking muffins, breads, snack bars and cookies for my family. I really enjoy it.
This broken oven has me all out of whack and scrambling to figure out what to feed my family. I have been searching for some no-bake options for snacks and treats, besides the traditional no-bake cookie, which I have made 3 times now. They are delicious but I was hoping to find something a bit healthier.
Enter my newest favorite recipe, No Bake Flax Snack! I made them today and they are GOOD. They won the approval of Gigi, my 3-year-old foodie. They turned out to be a bit too sticky in the mouth for Poppy, my 16 month old. Perhaps, though, if she hadn’t tried to consume it in one bite…. I will try to keep Gigi (and myself) out of the rest of them so everyone else can try some when they get home.
These snacks are super simple you have to give them a try. I even made my own oat flour before hand, as I didn’t have any.
No Bake Flax Snack
3/4 cup Flax Seed Meal (ground flax seed)
3 Tbsp Oat (or rice) flour
1 1/2 tsp of Cinnamon
2 Tbsp Peanut butter (or your favorite nut butter)
1/4 cup honey
Mix the dry ingredients in a bowl. Add the peanut butter and honey and mix with hands (it’s just easier!). Form into 1 inch balls and refrigerate on plate/tray/wax paper (whatever, they don’t stick) to set them.
These little snacks are great for popping in a lunch box or serving up to the hungry after school crowd. Easily packable and low on mess they are perfect for on the go snacking!
