Egg, Avocado and Pesto Sandwich

I’ve never been a huge egg fan. It has always been once I eat one egg I am done for about a week (or more). My liking of eggs has greatly improved since getting fresh (non-forced) eggs from local farms. They just taste better, are healthier and you can feel good about buying them.
So, since eggs are growing on me, I have been trying to find tasty ways to enjoy them. Today a beautiful sandwich entered my life:

Egg, Avocado and Pesto Sandwich

First toast a couple of slices of bread. This would have been so pretty with some fancy bread like you may see in another blog that has very nice looking photos, but I don’t keep that bread around and I was making myself lunch. I used 100% Whole Wheat bread. Spread both slices of toasted bread with pesto (look here to make your own!).

Now smash one 1/2 of an avocado onto one slice of bread. Sprinkle just a bit of salt on it.

Isn’t avocado so pretty?

Fry up one egg (if you can get some local, fresh eggs you will be amazed at the difference in taste) and place on top of the avocado.

After I took this picture I ended up trimming a bit of egg of the top and filling in the bottom left corner with it.

Now add some slices of your favorite cheese. This happens to be sharp cheddar but there are SO many awesome cheeses out there. Have fun with it!

Now you have a delicious sandwich that is loaded with healthy ingredients. It is also VERY filling and kept me satisfied for longer than usual.
