You know that kid in Willy Wonka? The one who falls in the chocolate river and gets sucked up the tube? That would have been me if I were in that factory. I love chocolate. I crave it. It is a major weakness of mine.
This afternoon the kids were begging for a snack and the cupboards and fridge were pretty bare as we are prepping to go on vacation. But I always have baking ingredients on hand so muffins was the answer.
But not just any muffins. Chocolate muffins. But not just ANY chocolate muffins. TRIPLE chocolate muffins. Need I say more? Oh wait… yes! They are also vegan!
Vegan Triple Chocolate Muffins
1 cup unbleached All Purpose Flour
1 cup Whole wheat flour
2/3 cup cocoa powder
1 cup sugar
1 tsp baking soda
1 Tbsp vinegar
2 tsp vanilla extract
1/2 cup coconut oil, melted
3/4 cup chocolate coconut milk
1/2 cup almond milk
1 cup mini chocolate chips (Dairy free to be Vegan, I used Enjoy Life brand)
Preheat oven to 350 and grease 12-18 muffin cups (or line with papers). Mix dry ingredients (1-5) thoroughly. Add all wet ingredients to dry and mix until no dry spots remain. Fold in chocolate chips. Divide among prepared muffin tin and bake for 20 minutes. Allow to cool in pan for 5 minutes then remove to cooling rack to cool completely.
See what I did there?? I used chocolate coconut milk for some of the milk. Brilliant, right? These muffins taste like cake. One of my daycare kiddos actually got chocolated out 2/3 of the way through his second muffin. Clearly an amateur in the chocolate department.
